Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Dishwasher (Chlorine 0ppm), operator set up the triple sink to sanitize.

Raw animal food stored over/not properly separated from ready-to-eat food. In the bottom of the naked table cooler raw chicken, beef and chorizo are stored above squeeze bottles of assorted sauces. Operator moved items to proper storage.

Accumulation of debris on exterior of warewashing machine. There is an accumulation of debris on top of the dishwasher.
Equipment in poor repair. The door gaskets on the two doir reach in cooler in the kitchen are damaged.

Spray bottle containing toxic substance not labeled. There is a unlabeled chemical spray bottle in the dish washing area.
Ceiling not smooth, nonabsorbent and easily cleanable in food preparation, food storage, or warewashing areas. The ceiling throughout the kitchen and ware washing area is acoustic tile.
Employee personal items stored in or above a food preparation area, food, clean equipment and utensils, or single-service items. On a shelf by the dishwasher a jacket and purse are stored on top of packages of corn tortillas.
Equipment in poor repair. The door gaskets and the right hand door handle on the two door upright cooler in the kitchen are damaged.

In-use wet wiping cloth/towel used under cutting board.
Time/temperature control for safety food thawed in an improper manner. There is shrimp thawing at room temperature in a container in the triple sink.
